Lettuce Cups + Mango Salsa Recipe (Raw, Vegan, GF, SF, FF)


Over the years, I've noticed that people tend to struggle the most with lunch and finding raw and fat-free recipes.

I am always looking for ways that I can help with that.

This recipe is delicious, raw and fat-free, and it makes for an excellent healing lunch!

It is also very low in calories, so don't be afraid to eat a ton of lettuce cups!!


INGREDIENTS:

  • 1 head lettuce (romaine and leaf lettuce work best)

  • 3 cups mango, diced

  • 3 cups grape tomatoes, sliced

  • 1 purple onion, diced

  • 1/2 cup cilantro leaves, minced

  • 1 lemon or 2 limes, juiced

  • 1/2 orange, juiced

  • 2 tsp cumin

  • 1 tsp garlic powder

  • Salt and pepper to taste (optional)

METHOD:

  • Combine all ingredients, except for the lettuce, into a bowl and mix together.

  • Take individual pieces of lettuce, cut off the bitter end, and scoop the mango salsa into lettuce cups.
